You can never go wrong with bananas in your pastries or energy drinks and one of the most amazing things I enjoy making with bananas other than the Healthy Banana and Oat pancake is making a banana bread.

I found a recipe online and adjusted it to make it more flavourful and healthy. 

For starters, I added cinnamon and nutmeg which gives the bread such a rich flavour.

Ripe bananas are generally sweet and I reduced the amount of sugar from the original recipe and added fruit-based yoghurt. Yoghurt adds moisture to the cake and the berries in the yoghurt add sweetness and texture to the cake. You can add as many bananas as you desire to but reduce the amount of sugar. I have never thought of removing sugar completely from the recipe by adding more bananas, but I will try that out and share my findings :-)!

I happened to have had a combination of dark, milk and white chocolate around the house. I roughly chopped them up and added them as the last thing. Don't forget to cover the chocolate with flour to prevent them from sinking to the bottom of your pan.

If you desire to end up with a dense bread, don't use a mixer but use a spatula to combine everything but if you desire a smoother cake-like texture, then use a mixer which incorporates more air into the batter.

Allow the cake to cool before you cut through it with a serrated knife and enjoy it with a warm glass of milk.

This is what you need:

  1. 1 1/2  Cup All-Purpose Flour
  2. 3/4 Cup Sugar
  3. 1 tsp Baking Powder
  4. 1/2 tsp Cinnamon
  5. 1/8 tsp Nutmeg
  6. 1/2 tsp salt
  7. 1/2 Cup butter/margarine (room temperature)
  8. 2 eggs
  9. 1 tsp Vanilla essence
  10. 1/2 cup fruit yoghurt
  11. 4-6 ripe bananas mashed
  12. 2/3 cup of chocolate chips

This is how to go about it:

  1. Preheat your oven to 180 degrees Celcius
  2. In a medium bowl, combine all the dry ingredients and set aside
  3. In a larger bowl, cream the butter and sugar together until they are properly combined.
  4. Add the eggs one at a time and vanilla and mix until they are well incorporated.
  5. Add the dry ingredients into the wet ingredients and combine.
  6. Add the mashed bananas and yoghurt into the batter and combine.
  7. Add the chocolate chips into the batter and pour the batter into a prepared bread pan.
  8. Bake until a toothpick inserted at the centre of the cake comes out dry (around 30-45 minutes)
  9. Remove from the oven once done and allow the cake to cool before transferring it to a cooling rack.
  10. Serve with a hot cup of milk/tea
