I love chicken but I've been finding it harder and harder to make tasty chicken in different ways without using may processed spices and without making a chicken stew. 

This article marks the first of a few blog posts I will share on the different ways you can make your chicken experience a simple, tasty and enjoyable one.

The bbq chicken recipe I am about to share with you was made using a home-made bbq sauce recipe. You can make a batch of it in advance and use it when you need it. Just double the recipe and simmer the combination under low heat for 20 min to make your own home made BBQ Sauce. You can taste and see what you may need to add: more soy sauce for a saltier taste; more sugar for a sweet taste; a few drops of Worcestershire sauce for a more balanced flavour etc. You can store this sauce in the fridge in an air tight container up to a week and in the freezer up to three months.

I believe that just in the same way lemon tenderises meat, orange also does the same without overpowering the taste. But I should add that I prefer sweet citrus (oranges) to tarty ones (lemons). Other people prefer to use vinegar in their recipe. I find vinegar a bit too harsh for my recipes and sparsely use it and if I do use it, I prefer rice wine vinegar. I think I didn't grow up using vinegar as often but it's something I am willing to explore, one bottle of vinegar at a time.

Also, Kaputei products are just bae! My goodness! Just try them out if you're in Kenya! They never disappoint!  I used their Ketchup for this recipe. 

As for the spices, my all time favourite spices, that I never lack in my pantry, are garlic powder (you can use crushed garlic cloves instead, for this recipe) and Paprika! I can make amazing dishes with these two spices and a bit of salt. Anyway, the two play a big role in making this bbq sauce. 

For this recipe, you can marinate the chicken for 2 hrs or overnight. I made mine the night before and cooked them the following day. The orange juice gives it such an amazing aroma while it's in the oven! 

This chicken will end up having a thick sauce once it's done and you can use it to glaze the chicken just before serving.

What You Need:

  1. 4 Chicken legs
  2. 2 Tbsp Paprika
  3. 1 Tbsp Sugar
  4. 1/2 Tbsp Onion Powder
  5. 1/2 Tbsp Soy Sauce
  6. 1/2 tsp Black Pepper
  7. 1 tsp mixed dried herbs
  8. 1 tsp Ginger
  9. 1 tsp Worcestershire sauce
  10. 1/2 Cup Ketchup (I used Kaputei)
  11. Salt to taste
  12. Aluminium Foil
How To Make Them:

  1. Pre-heat your oven to 180 degrees
  2. Combine all the ingredients apart from the chicken in a small bowl until properly incorporated
  3. Add the chicken and ensure that it is well coated. You can place them in the fridge at this point for them to marinate
  4. Add the marinated pieces of chicken, sauce and all, and cover with a sheet of aluminium foil (I used my casserole dish for this) 
  5. Place the chicken in the oven and cook for 45 min
  6. Uncover and cook on once side for 5 min or until browned to your preference
  7. Turn over and cook for another 5 min or until browned to your desired preference
  8. Remove from heat and allow it to cool or serve hot with some nice vegetable rice
